This coffee comes from Villa Pastora, a family farm located in the mountains of Palestina, Huila, and managed by producer Gerson Mora. The farm carries the legacy of his grandmother, Pastora Anacona, who first planted coffee trees and laid the foundation for the family’s coffee tradition. Her dedication reflects the essential role that women have played in shaping the identity and sustainability of Colombian coffee farming.

Across Colombia, women are fundamental to coffee production—from cultivation and harvest to post-harvest processes and quality control. Their knowledge, resilience, and leadership help preserve traditions while driving innovation in specialty coffee. At Villa Pastora, this heritage continues to inspire the Mora family’s commitment to producing coffees that honor both origin and the people behind it.

Located in Huila, one of Colombia’s most celebrated coffee regions, the farm benefits from high altitude, fertile soils, and ideal climatic conditions that allow cherries to ripen slowly and develop complex cup profiles.

This lot undergoes a distinctive fermentation process. The coffee begins with a 60-hour fermentation in whole cherry, followed by pulping and a 30-hour oxidation stage. A mosto inoculum with yeast is then introduced, allowing the coffee to ferment for an additional 72 hours. Finally, the beans are dried under sunlight and finished with mechanical drying, ensuring stability while preserving the expressive character of the Borbón Rosado variety.

The result is a coffee that celebrates innovation, origin, and the generational work of families—especially the women—who continue to shape the future of Colombian specialty coffee.
